White Albacore Tuna is in season during the Summer months and it is currently being caught off the Washington Coast. Tuna typically follow the warm current so when the warm waters swing close to shore it makes fishing more accessible.

White Albacore Tuna is a deliciously delicate fish. Some tuna is frozen at sea with elaborate freezer systems built for preserving the best quality. This fish is what typically makes it’s way into fine sushi restaurants. Most of the local fresh market caught fish is used for canning. For years, canning was the only use for White Albacore Tuna, but it has started to make it’s way to the center of the plate at white table cloth restaurants around the Pacific Northwest. Chefs now recognize it’s amazing quality and it is at a much lower price point than Ahi Tuna, for example.
